Brochette with Caramelized Leeks & Feta Cheese

  • 1 tbsp. butter
  • 1 c. leeks, washed thoroughly and sliced 1/4-inch thick
  • Salt and pepper to taste
  • 2/3 c. feta cheese
  • 8 slices French baguette, toasted


  • Heat butter in skillet over medium heat. Add leeks, salt and pepper; cook until leeks are caramelized. Remove from heat. Stir in cheese. Spoon evenly on toast slices.
  • Preheat broiler and broil 3 minutes or until cheese is soft and hot.
