Smoky Chicken Tacos with Feta & Honey Avocado Crema

    Ingredients

  • 2 cups rotisserie chicken, shredded
  • 6 tablespoons chipotle salsa, warmed
  • 1 tsp. smoked paprika
  • 1/2 tsp. ground cumin
  • 1/2 tsp. dried Mexican oregano
  • 3-4 Pinch salt and pepper, divided
  • 1 small ripe avocado, peeled and pitted
  • 2 tablespoons plus 1/4 cup crumbled feta cheese, divided
  • 1/3 c. buttermilk
  • 2 teaspoons honey
  • 1 clove garlic, minced
  • 3/4 c. matchstick cut jicama
  • 1/2 c. matchstick cut mango
  • 1/4 c. matchstick cut red onion
  • juice of 1 lime
  • 1 tbsp. cilantro or parsley, chopped
  • 4 soft corn tortillas, warmed

    Directions

  • In a medium bowl stir together the chicken, salsa, paprika, cumin, oregano, & a pinch of salt & black pepper. To a blender or food processor add the avocado, 2 tablespoons feta, buttermilk, honey, garlic, & a pinch of salt & black pepper. Puree until smooth. In another bowl toss together the jicama, mango, red onion, lime juice, cilantro or parsley & another pinch of salt & black pepper. Spoon the chicken mixture down the center of each tortilla. Drizzle with the crema. Top with the jicama slaw mixture & remaining feta.
